Weeknight Dinner: Veggie Stir Fry

Do you need a tasty dinner recipe that the whole family will enjoy? This veggie stir fry is one of my favorites. I love how easy it is to make, even on a busy weeknight. Plus, it’s got lots of veggies making it easy to get in your veggies for the day. I double it so I can have leftovers the next day because in my opinion, leftovers make the world go round and one less meal I have to cook!

This Veggie Stir Fry is a healthier version on takeout that’s loaded with flavor.

Soy sauce is highly processed and contains MSG. And it contains phytoestrogens that are estrogen mimickers in the body. Veggie Stir Fry

Serves 4

Ingredients:

1 lb chicken, cubed

2 cups broccoli, chopped

2 carrots, sliced

1 cup snap peas

1 red bell pepper, cubed

2 green onions, sliced

1 8 oz can water chestnuts

1/2 tsp garlic powder

1/4 tsp ginger powder

1/4 cup coconut aminos

1 tbsp honey

2 cups brown rice, cooked

Directions:

  1. Add a little olive oil to skillet and cook chicken, sprinkle a little garlic powder, salt, and ginger powder on chicken. Place cooked chicken on a plate and set aside.
  2. Bring water to a boil and cook brown rice according to package.
  3. While the rice is cooking mix garlic powder, ginger powder, coconut aminos, and honey until well combined.
  4. Add a little olive oil, broccoli, carrots, snap peas, and bell peppers to the same skillet as chicken, salt to taste and cook until soft.

      5. Then add the water chestnuts, green onions, cooked chicken, and sauce. Let simmer for 3-4 minutes.

  1. Serve 1/2 cup brown rice with stir fry per serving.
