3 Ingredient Watermelon Popsicles

watermelon popsiclesIt’s summer, my absolute favorite season! I love the long, hot days, trips to the pool, and lots of cold treats.

This summer seems so different now that I have a big kid who is home again from school. It’s definitely an adjustment…any other moms struggling to find that new routine with school kids that are home now?! I’ve already heard “I’m bored” a thousand times, so I’m all ears if you have fun ideas to keep them busy!

Speaking of fun, I have a great recipe you can make with your kiddos to help suppress their boredom! We’ve been making these watermelon popsicles for years now, and I love including my girls in the kitchen. It shows them how to create with food and keeps them busy, even if it’s for a short time.

Popsicles are a staple in the summer, but the store-bought variety are often filled with sugar, dyes, and high fructose corn syrup. I think it’s so important to be aware of what we’re feeding our kids because they create their eating habits young. I love making these Watermelon Popsicles so the girls can still enjoy something cold on hot summer days.

Watermelon Popsicles 

Ingredients: 

1 cup cubed watermelon

¼ cup blueberries {frozen or fresh}

1 kiwi, sliced 

Popsicle mold

Directions:

Blend watermelon in a blender until liquid. 

Fill half the popsicle mold with watermelon juice, add fruit and top with watermelon juice until full. 

Put the popsicle sticks in the mold and put in freezer until frozen.
