Need a fun, fresh, end-of-summer treat? I have a quick and flavorful guacamole recipe for you! I never thought I liked guacamole until my wonderful sister-in-law made this recipe for me. I was hooked. I bought the pre-made guacamole on a trip one time. There is no comparison. This recipe is so simple, and most of the time I have the ingredients on hand. (I usually buy the big bags of avocados at Costco.)
For a twist the other day I even threw in some shredded chicken for an amazing lunch! I had seen photos around (probably on Pinterest) about using avocado to make chicken salad. I love chicken salad, and this was so yummy and creamy. I ate it with tortilla chips. Avocados are a super food–so healthy for us–and you will love to eat them once you try this simple recipe.
Guacamole Ingredients:
3 avocados (For a small batch, use 1 avocado.)
1 small tomato
1/2 small onion
1 clove of garlic
1/2 tbsp lemon juice
1 tsp dry cilantro OR 1 tbsp fresh (I don’t usually add cilantro as I don’t typically have any on hand.)
1/2 tsp salt
Method:
Dice the tomato and onion. Grate the garlic clove. (I use a microplane grater.) Mash the ripe avocado and add the lemon juice, garlic, onion, and tomato. Chop and add the cilantro (if desired) to finish the guacamole.
You could use a food processor to chop it all up, but I do it by hand–one less thing to wash!
Feel free to make adjustments. If you like a lot of garlic, then add more. If you don’t like onion, leave it out. I usually end up adding way too much garlic, so I have to add another avocado or just have really strong garlic breath all day! I love to make just a small batch and don’t really follow recipes; so if I think it needs more salt or onion I just add a bit more.
Serve with tortilla chips and enjoy. This will keep in the fridge–the top might turn a bit brown but just scrape it off and the rest is fine. I find that mine doesn’t typically turn brown if left overnight. Past that, I have no idea because… well… I never have any left!
