Eating Healthy Isn’t Hard + a Egg Roll in a Bowl Recipe

eating healthyThere’s a misconception that eating healthy is difficult or takes too long. But I’m here to debunk that myth.

Eating healthy truly can be simple, easy, and delicious. You don’t have to cook for hours in the kitchen (unless you want to) or eat plain chicken and broccoli either. There’s a healthy balance where even on a busy weeknight a yummy and healthy dinner doesn’t have to feel overwhelming. 

In fact, I timed a drive-thru trip to Chic Fil A once. It took over 23 minutes for me to drive there, wait in line, get my food, and then drive home. I could have made a super simple meal in those 23 minutes that would have been healthier and left me feeling more energetic. 

It’s one of my favorite things to hear from clients, “Eating healthy is so easy” or “I used to think eating healthy was hard but it’s so simple”!

We often make it too difficult or overthink it.

Simplify Healthy Eating

To help make your life easier and to give an example of a super quick but healthy and yummy meal, I’m sharing one of my favorite dinners from my Winter 4-Week Meal Plan, Egg Roll in a Bowl. 

It’s so easy to cook up, made from simple ingredients, and a favorite of many! It takes 20 minutes or less. If you need to bulk it up some feel free add brown rice.

A little note about coconut aminos because some aren’t familiar with it: it’s a healthier swap for soy sauce so you can use it interchangeably.

Egg Roll in a Bowl

Serves 4

1 lb ground turkey

3/4 cup onion, chopped

14 oz coleslaw mix

3 cups carrots, shredded

1/2 tsp ginger, ground

1 tsp ground ginger

1/2 tsp garlic powder

5 T coconut aminos

salt, to taste

green onion, optional

Directions:

Heat a little olive oil in a non-skillet over medium-high heat. 

Add onion and ground turkey and cook, breaking up turkey occasionally, until cooked through. 

Add ginger, garlic powder, and salt and stir until well combined. 

Add coleslaw, carrots, coconut aminos and cook until veggies are soft. 

Garnish with green onions if desired.
